1/4 cup paprika
1 tablespoon firmly packed dark brown sugar
1 tablespoon sugar
2 teaspoons salt
2 teaspoons Accent seasoning or MSG
1 teaspoon celery salt optional
1 teaspoon freshly ground black pepper
1 to 3 teaspoons cayenne pepper
1 teaspoon dry mustard
1 teaspoon garlic powder
1 teaspoon onion powder
Mix...most people prefer 1 tsp of cayenne. This is enough for
two chickens. VERY IMPORTANT if you store the unused portion, MAKE SURE that
it is UNTOUCHED by the raw chicken. I typically take out half just to make
sure that I do not contaminate the spice from the raw chicken.
This rub is good on most things. We like it on chicken, ribs,
oily fish (e.g. salmon), and pork.
